Easier Than Pie Pumpkin Mousse

I am not sure why they always say something is easier than pie…. it is not so easy to make a great pie!!

We made this pumpkin mousse recipe at our Half-Giving cooking class last week. With 6 months until Thanksgiving we made a full holiday dinner in half the time.

Easy Pumpkin Mousse Recipe

This pumpkin mousse recipe is easier than pie!!

Pumpkin Mousse Recipe

1 Tbs butter
24 marshmallows
½ cup milk
1/2 of a (15 oz) can solid packed pumpkin
1 tsp vanilla extract
1 tsp pumpkin pie spice
1/3 cup confectioners’ sugar
3/4 cup heavy cream

  1. Melt the butter in a heavy sauce pot.
  2. Stir in the marshmallows, milk, and pumpkin. Stir frequently until melted and smooth.
  3. Remove from heat; stir in vanilla and pumpkin pie spice.
  4. Cool completely, about 30 minutes.
  5. Whip cream to soft peaks then beat in sugar. Fold whipped cream into cooled pumpkin mixture.
  6. Serve in bowl or dessert dishes sprinkled lightly with cinnamon.

Solid packed pumpkin and 100% pumpkin are the same thing. The important thing to note is not to buy pumpkin pie filling.

Pumpkin pie spice is really just a blend of cinnamon, nutmeg, ginger and allspice. If you don’t have pumpkin pie spice you can use any or all of those 4 spices added together to equal 1 teaspoon. Normally you would use them in quantities in that order: more cinnamon, less nutmeg, and even less ginger then a pinch of allspice.

Easier Than Pie Pumpkin Mousse

Of course if you want to turn your pumpkin mousse recipe into a pie, just spread the mousse into a precooked pie crust and top with more whipped cream and now it is as easy as pie!!
