Easier Than Pie Pumpkin Mousse
I am not sure why they always say something is easier than pie…. it is not so easy to make a great pie!!
We made this pumpkin mousse recipe at our Half-Giving cooking class last week. With 6 months until Thanksgiving we made a full holiday dinner in half the time.
Easy Pumpkin Mousse Recipe
This pumpkin mousse recipe is easier than pie!!
1 Tbs butter
24 marshmallows
½ cup milk
1/2 of a (15 oz) can solid packed pumpkin
1 tsp vanilla extract
1 tsp pumpkin pie spice
1/3 cup confectioners’ sugar
3/4 cup heavy cream
Cinnamon
- Melt the butter in a heavy sauce pot.
- Stir in the marshmallows, milk, and pumpkin. Stir frequently until melted and smooth.
- Remove from heat; stir in vanilla and pumpkin pie spice.
- Cool completely, about 30 minutes.
- Whip cream to soft peaks then beat in sugar. Fold whipped cream into cooled pumpkin mixture.
- Serve in bowl or dessert dishes sprinkled lightly with cinnamon.
Solid packed pumpkin and 100% pumpkin are the same thing. The important thing to note is not to buy pumpkin pie filling.
Pumpkin pie spice is really just a blend of cinnamon, nutmeg, ginger and allspice. If you don’t have pumpkin pie spice you can use any or all of those 4 spices added together to equal 1 teaspoon. Normally you would use them in quantities in that order: more cinnamon, less nutmeg, and even less ginger then a pinch of allspice.
Easier Than Pie Pumpkin Mousse
Of course if you want to turn your pumpkin mousse recipe into a pie, just spread the mousse into a precooked pie crust and top with more whipped cream and now it is as easy as pie!!
