Sweet ‘n Hot Blueberry – Corn Salsa Recipe

Sweet ‘n Hot Corn Salsa Recipe

Corn Salsa Recipe

1 Tbs. olive oil
2 cups fresh corn kernels
1 garlic clove – pressed
2 small tomatillos, husks removed, rinsed, and finely chopped (about 1/2 cup)
2 fresh jalapeno or serrano chile peppers, seeded and finely chopped
¼ cup fresh cilantro
3 tablespoons honey
1 tsp lime zest
2 Tbs lime juice
salt
1 cup fresh blueberries

  1. Heat the oil over medium heat. Add the corn and the garlic. Cook and stir for 3 minutes.
  2. Stir in the tomatillos and jalapeno peppers. Cook and stir about 3 minutes more.
  3. Remove from heat and cool slightly. Stir in the cilantro, honey, lime peel, juice, and salt.
  4. Gently toss in blueberries.

Tomatillo are a Mexican fruit that look like green tomatoes but are not in the tomato family. They are usually available in conventional grocery stores.

If you cannot find them, feel free to substitute green tomatoes if they are not available.
