Super, Sensational, Simple Summer Salad Solutions
This is one of my favorite Summer favorites. It is quick to make and intense in flavor due to the balsamic vinegar.

Colossal Chopped Pasts Salad Recipe
1 pkg. (¾-1 pound) whole wheat pasta-cooked
Pick at least 4 of the following or any other fresh veggies you want to use:
1 sm. red onion-diced
1 lg. carrot-chopped or shredded
1 sm. yellow squash-chopped
1 sm. zucchini-chopped
2 cup broccoli florets
3 plum tomatoes-cubed (or cherry tomatoes-halved)
1 medium red, yellow or green pepper
1 tsp. Italian Seasoning Mix
2 cloves garlic-pressed
¼ cup balsamic vinegar
½ cup olive oil
4 oz fresh Parmesan cheese-grated
1 head red tip leaf lettuce-washed and cut into 1-inch pieces.
- Combine first 6 ingredients.
- Combine next 4 ingredients.
- Toss pasta mixture, dressing and Parmesan cheese thoroughly.
- Serve over lettuce or toss with the lettuce
Healthy Chopped Salads = Whole Wheat
Anytime you are using wheat make sure it is whole wheat. A healthy diet includes a variety of whole grains and fresh vegetables so just chop every vegetable in the house. Be creative!
